For the Roasted Brussels Sprouts

Preheat the oven to 425°F. Toss together the Brussels sprouts, oil, salt, and black pepper in a medium bowl; spread out evenly on a large baking sheet. Bake until golden and starting to turn crispy, about 20 minutes (no need to toss halfway through).

For the Mashed Cauliflower

Add the cauliflower and garlic cloves to a medium saucepan and cover with cold water. Bring to a boil, and then turn the heat down a bit so it doesn’t boil over. Continue cooking, covered, until the cauliflower is easily mashed, about 8 minutes. Drain well. Add the cauliflower and garlic cloves, butter, salt, and black pepper to a food processor and process until smooth.
